Galette des Rois Recipe

“We offer you a recipe for galette des rois to accompany the Sparkling which is a blend of Muscat Petits Grains and Colombard. Our sparkling wine is very aromatic, lively and floral, can be drunk very chilled, almost chilled as an aperitif or as a dessert.

Ingredients
2 puff pastry, 140 g ground almonds, 100 g fine sugar, 2 eggs, 70 g soft butter, 1 egg yolk

Preparation

  1. Place a puff pastry in a pie pan, prick the pastry with a fork.
  2. In a salad bowl, mix the ground almonds, the sugar, the 2 eggs and the soft butter.
  3. Place the resulting dough in the pie pan and hide the bean inside.
  4. Cover with the 2nd puff pastry, sticking the edges well.
  5. Make designs on the lid and brush with egg yolk.
  6. Bake for 20 to 30 min at 200°C (thermostat 6-7); check regularly for doneness!
