Description

Varietal: 60% Syrah, 20% Grenache Noir, 10% Carignan, 10% Mourvèdre

Terroirs: schistous marl on the hillsides and clay-limestone on the flat parts along the edge of the Agly. Mediterranean climate.

Vinification: Harvested at optimal maturity, the different grape varieties are vinified separately in the traditional way. The maceration will be spread out over 2 to 3 weeks. Final assembly carried out in the spring.

Ageing: In stainless steel vats then in bottles in our cellar.

Tasting: deep red with purplish reflections, supple and ample attachment marked by notes of black fruits (cherry, blackcurrant), velvety tannins, finish with notes of spices and red fruits, slightly vanilla.

Food pairing: blue-veined cheese, charcuterie, grilled red meats
